My decision to switch to a plant-based diet 4 years ago was one of the best decisions I’ve ever made.

The transition was not easy for me and it did not happen overnight. It took me almost 3 years to get it right.

When I first started this journey, I was confused and overwhelmed. I was a horrible cook. I often attempted recipes only to throw the meals in the trash because they were so gross. I still remember my first time walking into a Whole Foods Market. I felt completely out of place and had no idea what to buy or how to put the ingredients together in a meal that was edible.

I’ve spent the last 4 years reading as many books as I can about plant-based diets. I have a dozen vegan cookbooks and can finally make a meal that tastes delicious.
I’m much more confident when asked about my vegan lifestyle and the health benefits I’ve experienced speak for themselves.

Not only has my cooking improved drastically, but so has my emotional and physical health.

Before going plant-based my health was in a downward spiral. I was gaining weight, I was depressed, my skin was covered in cystic acne and I suffered with painful (and embarrassing!) digestive issues. My periods were painful and my mood swings were unpredictable. I had frequent insomnia and was always tired and depleted. I struggled at work with brain fog and lacked concentration.

I frequented doctors offices for my digestive issues, cystic acne and allergies. It was not uncommon for me to have to beg my dermatologist to inject my acne with cortisone shots.

My stomach problems became so severe, that I had to undergo a colonoscopy and endoscopy in my early 30s. I was diagnosed with inflammation of the stomach and prescribed a medication for IBS.
I was desperate for help but had no clue what to do. One day while shopping at Target, I saw the book “The Beauty Detox Solution” by Kimberly Snyder. As the saying goes, “when the student is ready, the teacher will appear.” The book was about transitioning to a plant-based diet and detoxing the body. It set me on a path that changed my life.

I created The Vegan Glow to help women transition to a plant-based diet without overwhelm, frustration and failed recipes.

When I went vegan, I had no support system. I didn’t know any other vegans. Family members, co-workers and friends did not understand my lifestyle changes and thought it was extreme of me to stop eating animal products. It doesn’t matter if you want to go 100% vegan or if you want to experiment with incorporating more vegan meals into your diet, I can help. I believe that the more plant-based meals you eat, the better you will look and feel.
